Preparation method
- In a bowl, mix sugar, water and honey before boiling.
- Cook over medium heat without stirring until the syrup begins to thicken (about 3 minutes).
- When the syrup reaches hard candy point, and hardens quickly as it cools, turn off the heat.
- Using a mixer, beat the egg whites until stiff.
- Add the hot syrup in a stream, whisking constantly for about 2 minutes.
- Stir slightly with a spoon and beat again for another 2 minutes, until the mixture becomes thick, shiny and sticky.
- Add roasted peanuts and mix well.
- Cover a plate with plastic wrap, grease it with a little oil, and sprinkle a little cornstarch.
- Pour the nougat over the dish, sprinkle more starch on top and cover it with plastic wrap.
- Press to level, forming an even square.
- Place it in the refrigerator for at least an hour until it solidifies.
- We take it out, cut it into small discs, and serve it.
