Preparation method
- Break the eggs into a bowl and add the milk and salt.
- Beat with a fork or whisk for about 2 minutes, until mixture is very combined.
- Grease a frying pan with a little olive oil and place it over medium heat until hot.
- Reduce the heat and pour the mixture when the pan is hot.
- Stir constantly, scraping the bottom and sides, until evenly cooked.
- Continue stirring until the eggs are creamy and cooked through, without turning brown.
- Serve immediately and top with chives if desired.
