Reusing food scraps prevents waste, saves money on food purchases and makes your routine more convenient.
One of the main reasons why you should start reusing food scraps is to avoid waste. Each Brazilian throws more than 40 kg of food in the trash per year, according to a study carried out by Embrapa with the support of Fundação Getúlio Vargas. Additionally, according to Insper data, 93% of Brazilians have felt the rise in food prices in their pockets.
In this scenario, waste is even more annoying. However, if all precautions are taken with the right measures, reusing leftover food can help create delicious new recipes, in addition to making your routine more convenient.
Be careful when reusing food scraps
Nutritionist Catia Medeiros, from the Atual Nutrição clinic, recommends some steps to reuse food leftovers.
Do not leave cooked meals out of the refrigerator for more than two hours
Bacteria proliferate very easily in this situation, turning food into a source of contamination. It is therefore important to be careful to store leftover food in a tightly closed container in the refrigerator or freezer.

Ideal temperature
Cool cooked foods quickly, keeping them below 5°C if storing them. If you plan to serve them, keep them above 60°C until ready to serve.
