“Although it is a dish of values and hatred, the truth is that it has extraordinary nutritional value”, explains the expert, stating that “it is very rich in protein. A small piece of blood sausage contains between 15 and 20 grams of protein, the equivalent of three eggs. It is very high in irona mineral essential for the functioning of the thyroid and red blood cells. It is very high in vitamins and mineralsparticularly in B complex vitamins, which are very important for brain function, memory and the nervous system.
He also adds that black pudding is “rich in zinc, potassium and magnesium” and that “if you thought it was a poor man’s dish, you are wrong, because it is pure gold”. However, this implies not consuming this fried food using “poor quality reheated oils” and doing it in a “conscious” way.
Out of curiosity, the functional doctor explains that in Latin America, the blood sausage is a useful food. “It is a very popular dish in Latin gastronomy and the legacy of an ancient tradition that teaches us to be good poor people and, when it comes to eating, we waste nothing. And that is why blood sausage is made from intestines and blood. In Colombia we add peas, rice, onion and many spices,” he explains.
