Making your own giveaway transforms Christmas dinner. Unlike the synthetic product, this version is 100% natural and made with ingredients you know. The flavor becomes more authentic, aromatic and juicy. Best of all: it costs about half the price of an off-the-shelf tender on the market.
To heal (2 days)
- 1 chicken of pork weighs about 1 kg
- 200 ml of water
- 20 grams of salt
- 10 grams of sugar
- 1 tablespoon mustard
- 1 star anise
- 1/2 cinnamon stick
- 5 black peppercorns
To scrub
- 1 tablespoon salt
- 1 tablespoon sugar
- 2 tablespoons paprika
- 1 teaspoon freshly ground black pepper
Grill seasoning blend
- 3 sheets of aluminum foil
- 1 cup mustard
- 1 cinnamon stick
- 3 stars anise
- 1 tablespoon black pepper
For the passion fruit sauce
- Pulp of 4 passion fruit
- 1 bunch of basil
- 1 tablespoon cornstarch
- 1 small piece
- ginger
- 4 tablespoons of honey
- 100 grams of butter
- 1/2 cup water
Preparation (treatment)
- In a frying pan, heat mustard, anise, cinnamon and pepper. Then grind it in a mortar until it turns into a powder.
- Return the spices to the pot, add water, salt and sugar, and stir until they dissolve. Set it aside and let it cool.
- Place the duck in an airtight bag, cover it with the treatment and inject it with saline solution every 3 cm. Refrigerate for 2 days
- Remove from the refrigerator, reserve the curing liquid, dry well with a paper towel and tie with string.
Ruby
- Mix all the ingredients and then apply it to the entire piece, so that the entire surface is seasoned.
Aromatic blend
- Open 3 sheets of aluminum foil, roll up the sides to form an open bundle and place the dry spices on top. Add mustard seeds, cinnamon stick, star anise and peppercorns.
- Place it directly on the coals or on the base of the oven
Passion fruit sauce
- In a pan, put the passion fruit pulp, ginger, honey and basil. Cook for 3 minutes.
- Place in a food processor, grind, filter, then return to the pan. Dissolve cornstarch in water and add it to the pot. Cook for 5 minutes. Until it thickens
- Turn off the heat and add the butter
Final preparation
- Place the baking tray containing the curing liquid on the lower level of the oven. Bake in the oven at 150°C for approximately 4 hours, until the internal temperature reaches 72°C.
- Take the tray out of the oven, remove the string, cover it with a thin layer of passion fruit sauce and return it to the oven at 220 degrees Celsius. Let it brown for 10 minutes
- We take it out of the oven, let it rest for 10 minutes, then cut it. Served with passion fruit sauce
