Ham fricassee
Time: 40 minutes

Ingredients:
- 4 tablespoons of olive oil
- 1 chopped onion
- 4 cloves of crushed garlic
- 2 seedless tomatoes, diced
- 3 cups leftover roasted or cooked pork shank
- Salt, black pepper and chopped green pepper to taste
- Olive oil for greasing
- 1 cup grated mozzarella cheese
- 1 cup grated provolone cheese
- Straw potatoes to decorate
Preparation method:
- In a pan, heat the olive oil over medium heat and sauté the onion and garlic for 4 minutes.
- Add the tomatoes and meat and brown for 4 minutes.
- Season with salt, pepper and green perfume.
- Transfer to a medium greased baking dish and cover with the cheese mixture.
- Bake in a preheated medium oven (180ºC) for 20 minutes or until lightly browned.
- Decorate the sides of the dish with straw potatoes and serve.
