When a dish becomes so popular that it becomes a brand. This is the case of Armando escalopeswhose success led to Familia La Ancha, which began serving them in its restaurant over 50 years agohas … launch a delivery service for this dish in the middle of a pandemic and now directly open its own establishment.
Located on Carranza Street, in Chamberí, Armando is a temple of breaded steak where you can enjoy it without guilt in an informal and fresh but designer atmosphere -their chairs are unique, for example-, where reservations are not accepted and there is a capacity of approximately 40 guests.
In this restaurant there is an obvious protagonist: “We want to travel the world. We are crazy about schnitzel and we believe in the power it has to generate happiness”, says Nino Redruello, fourth generation of Familia La Ancha (Fismuller, Club Financiero, Las Tortillas de Gabino, La Ancha and with a foot in Lisbon), a company founded in 1919 by great-grandfather Benigno Redruello.
The history of the dish is curious. This was born in 1970, when in the dining room then run by Santiago Redruello – son of the founder – an Argentinian customer named Armando asked him “the biggest cutlet” (it would surely then be “the Milanese”) who could be of use to you. In the kitchen, they quickly prepared a thin piece, tender on the inside, crispy and golden on the outside and very hearty, so much so that “they needed a paella pan to fry it”.
In the current Armando you can take the classic40 centimeters of meat pork (19 euros), or versions of chicken (18, 30 cm), fish -swordfish (19)- or vegetable -eggplant (14)-. On the chosen breaded piece there is the possibility of adding accessories that the dining team finishes setting up and serves on the table. In this section there is everything from low-temperature eggs with truffle (4.50), spinach au gratin with cream (5) or porcini mushrooms stewed with egg and potato (7), up to macaroni au gratin with chorizo (5).
As fittingsArmando offers his fries or mashed potatoes (3.50) or his salads (3 and 3.50), among other proposals. Aside from schnitzels, there are other sharing dishes on the menu, like ham croquettes (10) or omelette (12), and options like a meatball sandwich (14) and a pseudo schnitzel burger stuffed with cheddar (1,350).
In dessertshave been able to be original and practical with a unique base of fresh homemade milk ice cream (7) which comes in flavors of French toast, lemon pie, cowboy cream, Swiss flan, Chinese or Dracula.
