THE Tournament Street is about to add a tenant with two faces and a name that says it all. Paquito Pucherothe new commitment of the Lola group for God, will open in a few weeks in the historic premises of … The Vázquez, a space that has operated as a tavern for four decades inside a building by Aníbal González. The project presents a concept that is played out in two stages: traditional stews at lunchtime and ramen with a Sevillian spirit in the evening.
Lunch of stews, stews and tavern spirit
During the day, Paquito Puchero It will function as a catering house where the stews will be the protagonists. There will be Madrid, mountain and Alicante versions (the latter with their classic meatballs), as well as stews like cabbage, cod tripe with chickpeas or beans with venison.
In all, nearly a dozen stews that can be ordered as tapas or by the plate, except the cooked from several turns, which will preserve their liturgy: 15 euros per week and 20 on weekends, with the pot in the center so that everyone can help themselves.
The spirit of the proposal He moves between the Sevillian tavern and the Portuguese restaurant, a nod that will be even more noticeable when winter passes and drier, less velvety dishes intended to be accompanied by rice enter the menu.
To this base will be addedBar snacks such as sandwiches with light bread and lots of sauce, gildas or salada menu that will maintain informality and the idea of eating without complications.
Sevillian ramen evening
When night falls, Paquito Puchero changes plans. The place is transformed into what they named Spanish Ramen Club, a ramen bar inspired by midday stews.Jota Leirós, also director of Ostras & Puñales, explains that the idea was born during a trip to Thailand, where they saw establishments that completely changed their menu depending on the time of day. The same thing will happen here: pringá, shank or stew broth will be part of the ramen, stir-fried flat rice noodles or meat dumplings cooked in the stew broth. The aesthetics will also change: natural wines, subdued lighting and an atmosphere that will play with this mix between Asia and local family cuisine.
The place It is currently undergoing renovation. The Mensaque tiles will be retained and other Portuguese tiles will be incorporated, recovering the exposed bricks and details that allow the space to maintain the character given by the years. Inside it is approximately 60 square meters, high ceilings and windows overlooking Torneo, as well as a large terrace that will be key to the rhythm of the neighborhood.
Paquito Puchero doesn’t just arrive with stews, comes with the intention of being a place with two souls —the traditional spoon and the reinterpreted ramen—in one of the busiest areas of the city. And with this mix, Torneo is about to add a different tavern, which changes according to the weather and which brings the restless brand of the Lola por Dios group.
