In front is a young chef from Cáceres who, after passing through remarkable cuisines (Atrio, Aponiente, Lú Cocina and Alma, Lera), returned to his native country eager to share his experience.
Guti Moreno decided to open a haute cuisine restaurant in a place as unexpected as this –tasting menu and only seven tables spaced apart, in addition to a private room for 16 people maximum – in which it offers “wild, local cuisine based on seasonal products”.
Accompanied by an equally enthusiastic team, led by sommelier Mario Fernández, pastry chef Elena Acero and María José Mañoso in the room, the chef offers traditional recipes crossed by contemporary techniques, with hunting and vegetables of the land – even your own garden – as central elements.
In Tupío, whose name derives from the castúo or dialect of Extremadura and means content to eat or drink, there is two menus (75 or 100 euros)with dishes like rabbit, deer, Iberian pork, duck, Extremadura cheese and butter, simmered pochas, pigeon, quail and mushrooms, but also fish – they want to maintain “an open vision” -, which at the moment is cod roe in importance.
The gastronomic bet begins from Extremadura company Laura Oterowhich after devoting itself for years to the electrical sector, decided in 2021 to develop in the hotel industry and tourism. At Finca la Desa they built a complex which also houses a bar, a à la carte restaurant perfect for a shared lunch or dinner or more informal (note their beef and pork grilled with vine branches, as well as their salad and sausages) and a modern setting. hotel 24 rooms, two of which have a jacuzzi.
From this corner famous for its tomatoes and located in the center of Extremadura, half an hour from Trujillo, Mérida or Medellín and less than an hour from the city of Cáceres or the emblematic Monfragüe Natural Park, the team repeats that its motto is “fight for contribute to the gastronomic growth of Extremadura“.
