Mousse is one of the simplest desserts to prepare. Its pleasant texture and the simplicity of its preparation crown it as one of the best treats to make at home, and its presentation, usually in individual glasses, makes it one of the most attractive. It’s a guaranteed success, the perfect balance between effort and benefit. And if we prepare this treat with fruit, it’s much better. Concretely, it is a dessert which finds red fruits in their perfect complement. Whether you make a blueberry mousse or combine redcurrants and raspberries, you’ll always have a creamy dessert at home.
Blueberry mousse
Intense in flavor, but soft in texture, blueberry mousse is a dessert that, although cold, is generally associated with winter. It’s easy to make at home and doesn’t require a lot of ingredients.
The key element of this sweetness is undoubtedly the blueberry. In Spain, the blueberry season extends almost all year round, with varieties ripening from March to August, with some even extending into October. This is why it is not very difficult to find fresh, domestic blueberries most of the year. If, despite this, it is difficult for you to find them, you can also buy them frozen.
It is also possible to freeze them yourself, to do this you just need to put them in an airtight container, or in zipped bags suitable for freezing. Keep in mind that due to the amount of water they contain, they can stick to each other. If you don’t want to defrost them all at once, you can freeze them in a large ice cube tray, so you always have the blueberries divided into comfortable portions.
Freeze them yourself or buy them already frozen, keep in mind that their texture will be altered, making them softer. Fortunately, for this recipe this difference will be almost imperceptible. To prepare it you will only need the following ingredients:
- 300 grams of blueberries
- 200 milliliters of liquid whipped cream: it must contain more than 35% fat
- 50 grams of cream cheese
- Two sheets of gelatin
- 40 grams of sugar
This mousse can be prepared in record time, since its preparation time is very short. Of course, you will have to wait for it to rest in the refrigerator for a few hours. To prepare a blueberry mousse you must follow these steps:
- Cool the whipped cream, bowl and beaters you are going to use in the refrigerator. This way you can assemble it without much difficulty.
- Hydrate the gelatin in a bowl of cold water and drain it by diluting it in hot water. The only challenge with this dessert will be to prevent the gelatin from leaving lumps, which can be very unpleasant when tasting. To avoid this, it will have to be diluted well. You can also pass it through a fine sieve.
- Blend the blueberries using a blender until you obtain a smooth puree.
- Mix the gelatin with the cranberry puree.
- Beat the cream with a whisk until it forms stiff peaks.
- Using enveloping movements, add the cream cheese with the sugar to the cream until you obtain a homogeneous texture. You can use a pastry tongue.
- Divide the mousse into individual glasses and store them in the refrigerator for four hours.
Red fruit mousse
Although blueberry mousse is delicious on its own, it is possible to prepare an even more versatile, but equally delicious, dessert. It’s a red fruit mousse, where you can combine all types of fruit. You will only have to monitor the quantities of fruit to prepare the desserts, so you can always prepare a dessert with seasonal red fruits. If you cannot find red fruits, there is also the possibility, as with blueberries, of buying them frozen. In general stores, it is common to see mixed fruits in the frozen section. To prepare this red fruit mousse, you will only need the following ingredients:
- 250 grams of red fruits: currants, blackberries or cherries, you can combine the red fruits you want as you wish
- 200 milliliters of liquid whipped cream: as for the blueberry mousse, it must contain more than 35% fat
- A teaspoon of gelatin leaves
- 20 grams of sugar
To give it a different twist, this recipe replaces the cream cheese with mascarpone. It is a cheese with a much higher fat percentage, with a minimum of 40%. Although mascarpone is usually associated with the preparation of tiramisu, this mild cheese is perfect for preparing a mousse. Given its fat percentage, a lower proportion of whipped cream will be needed for this recipe.
Another difference is that you will not mix the red fruit puree with the cheese, cream and gelatin. It will be a sauce that you pour over the mousse, or on the side of the glass. To prepare this dessert, you will only have to follow these steps:
- Remember to put the whipped cream, the bowl and the whisks in the refrigerator.
- Next, hydrate the gelatin leaves in a bowl of cold water and drain them. After that, dilute them in hot water. Keep in mind the importance of leaving no lumps.
- Whip the cream with the sugar until soft peaks appear, and add the mascarpone in enveloping movements. Add the gelatin.
- Pour the mixture into small glasses and let sit in the refrigerator for four hours.
- Meanwhile, mash the red fruits until they become a puree.
- Once the time has elapsed, serve the mousse with the red fruit puree.
