Recipe Pavé de crème with red fruits
How about innovating and preparing a red fruit cream pavement? Discover the step-by-step recipe below, following information from journalist Giulia Roriz:
Ingredients
Cream
- 2 pots of cream (600 g)
- 1 can of condensed milk (395 g)
- 1 teaspoon of vanilla essence (5 ml)
- 1 can of cream (200 g)
Jelly
- 3 cups of red fruit tea
- 2 cups of sugar (360 g)
- 2 tablespoons of lemon juice (30 ml)
Assembly
- ½ cup of milk (120 ml) 300 g of champagne biscuits
Preparation method
- In a saucepan, put the red fruits, sugar and lemon juice. Cook over low heat, stirring, until boiling and reduced, forming a glossy jelly. Set aside and let cool.
- To find out the location, run a spoon through the center of the jelly: if a “path” forms that doesn’t close quickly, it’s at the ideal point.
- Using a mixer, beat the very cold cream until it becomes thicker and lighter.
- Add the condensed milk, cream and vanilla. Beat until you obtain a smooth and velvety cream.
- In a refractory, spread a layer of cream.
- Quickly moisten the biscuits in milk and cover them with cream.
- Cover with cream and spread dollops of jelly on top.
- Repeat the layers until the end, ending with the jelly.
- Refrigerate at least 4 hours before serving to firm up.
