The Christmas engines are starting to heat up. The most avant-garde will already be thinking about what the menu (or menus, plural) will be this year; and the least, wait for the date to arrive calmly. In this week’s menu, we have included some recipes that can serve as practice for what follows, whether you are one or the other: a soup, a pâté, an easy fish stew, a few recipes with vegetables and several desserts. So don’t say that the holidays surprised you!

Monday December 8

FIRST OF ALL: VEGETABLE SOUP WITH EGG AND LEMON

In Balkan cuisine, it is customary to finish many dishes with a mixture of eggs and lemon called “avgolemono”. Here we apply it to a simple and comforting vegetable dish.

SECOND: COUNTRY PATE

It doesn’t include liver or complicated preparations beyond chopping a few vegetables and mixing the dough well. Almost all the work is done in the oven and it stores perfectly for other holiday meals.

DESSERT: MARBLE CAKE

The visual effect of this classic cake is achieved by giving the dough two colors with the addition of cocoa powder. The recipe can be transformed into a cake by adding a little topping.

FIRST OF ALL: GRILLED CABBAGE WITH PARMESAN AND ANCHOVY SAUCE

Very far from overcooked and fragrant cabbage, in this dish the cruciferous cabbage brings out its crunchy, aromatic character and retains the pleasant hint that it has raw.

SECOND: CRISPY RICE SALAD

The dish went viral on TikTok under the name “crispy rice salad,” and we have something to tell you: the most recommended method doesn’t work. Here we show you one so that it looks really good.

DESSERT: SEASONAL FRUITS: KIWI

Kiwi is in season and is one of the fruits with the highest concentration of vitamin C. Ideal for coping with the cold.

Wednesday December 10

FIRST OF ALL: Basque-style chard

If you think chard is boring, try making it with boiled potatoes, breaded stems and Idiazábal cheese. And now, if so, tell us.

SECOND: TOFU CURRY

There is no one way to prepare curry in India; depending on the region, the ingredients, spices and even the container in which it is cooked vary. This one is smooth, sweet and creamy thanks to the coconut milk.

SECOND: HUSBAND KILLER

Its name comes from a time of scarcity when light food was not highly valued, but “matamaríos” or white stew is the sweet and comforting soup we need in 2023.

FIRST OF ALL: BRUSCHETTA CANDIED ARTICHOKE

We put a few artichokes in oil flavored with garlic, mint and lemon – boil them a little beforehand to make work easier – and we serve them on toast, in the style of Italian “antipasti”.

SECOND: CHICKPEAS WITH SPINACH

It’s ready in 10 minutes, you can accompany it with rice, keep what’s left for the next day, or enrich it with a little feta or an egg.

MAIN COURSE: BAGNA CAUDA

A very tasty sauce prepared over low heat with lots of garlic, anchovies and olive oil where seasonal vegetables are dipped to die for.

DESSERT: NO-BAKE LEMON COOKIE CAKE
