Ingredients
Mass:
- 1 kg of wheat flour
- 500 ml lukewarm milk
- ½ cup sugar
- 1 teaspoon of salt
- 50g butter
- 1 tablespoon of oil
- 30 g of yeast
- 1 egg
Filling:
- 200 g mushrooms or other mushrooms of your choice
- 1 onion
- 3 cloves of garlic
- salt and spices to taste

Preparation method
- In a bowl, put the warm milk, yeast and sugar, mix well and leave for a few minutes until it starts to foam slightly.
- Add the salt, melted butter, oil and egg, mix and add the yeast mixture.
- Add the wheat flour little by little, kneading until you obtain a soft and elastic dough that does not stick to your hands.
- Cover the dough and let it rest for 45 to 60 minutes, or until doubled in size.
- In a pan, heat a drizzle of oil and fry the onion until golden.
- Add the chopped mushrooms and cook until all the liquid they release evaporates.
- Add the garlic, salt and spices, mix well, turn off the heat and let the filling cool.
- Divide the dough into portions, roll it out into disks and place a spoonful of filling in the center of each.
- Close the edges tightly, shape the empanadas and place them on a greased or parchment-lined baking sheet.
- Brush with egg yolk and bake in a preheated oven at 200 degrees for 20 to 30 minutes, until golden brown.
- Remove from the oven and serve while still hot.
