- 2 cups of rice
- 1/2 yellow pepper
- 1/2 red pepper
- 1 onion cut into cubes
- 1 ripe seedless tomato
- 3 cloves of garlic
- 1/2 cup pitted olives
- 1 liter of water
- Calabrian pepper to taste
- Salt to taste
- Saffron to taste
- Olive oil to taste
- 1 sprig of basil
- 1 sprig of oregano
- 1 sprig of chives
- 1 sprig of sage

Preparation method
- Let the cod soak for 24 hours, changing the water as much as possible.
- Cook the sliced cod for 15 minutes, drain and set aside.
- Cut the peppers, onion and tomato into small cubes.
- Crush the garlic cloves.
- Tie the fresh herbs into a small bouquet.
- Wash the rice well and set aside.
- In a large skillet, heat the oil and fry the garlic and onion until golden.
- Add the cod, vegetables, pepperoni, saffron, herb bouquet and salt.
- Mix gently for about 10 minutes to enhance the flavors.
- Add the rice and olives, mixing well.
- Add 4 cups water and cook until the rice is tender, adding more water if necessary.
- Remove the bouquet of herbs, finish as desired and serve hot.
