Preparation method
- In a bowl, mix the honey and mustard well until a smooth sauce forms. Book.
- With a sharp knife, make shallow cuts into the tender, forming a checkerboard pattern.
- Stick the cloves at the junctions of the cuts, distributing them over the entire surface.
- Coat everything tender with the honey and mustard mixture.
- Place the fillet on a baking tray and bake in a preheated oven at 180°C until golden brown, basting it with the sauce from the tray during preparation.
- Transfer to a plate and garnish with pineapple slices, grapes and cherries before serving.
