Preparation method
Peel the potatoes, cut them into cubes, and cook in salted water for about 7 minutes until tender. Drain and let cool.
Cook peeled and chopped carrots until tender. Drain and reserve.
In a large bowl, mix potatoes, carrots, corn and olives.
Add green pepper, olive oil, salt, oregano, pepper, and lemon juice, and mix the ingredients well.
Add mayonnaise and mix until everything is well combined.
Transfer it to a plate and refrigerate it for at least 4 hours before serving to make sure it stays cold and delicious.
