Ingredients:
For the sourdough
- 50g fresh yeast.
- 5 teaspoons warm milk.
- 50g 0000 flour.
For the main mass
- 175 g pomade butter.
- 200 g of ordinary sugar.
- 4 eggs.
- 600g 0000 flour.
- 1 teaspoon vanilla essence.
- 400 g chocolate to melt.
- 100 g chopped hazelnuts.
- Peel of an orange.
- 1 teaspoon honey.
- 100 ml whole milk.
Step by step:

For making the sourdough
- Dissolve the yeast in the warm milk and add the sugar.
- Add the flour and mix everything together.
- Let it sit at room temperature until it doubles in volume.

For the main dough, sweet bread dough
- Form a ring of flour on the work surface and crack the 4 eggs in the middle.
- Add milk, sugar and honey. Mix the liquids until everything is homogeneous.
- Avoid breaking the crown.
- I added orange peel, vanilla essence and orange blossom water.
- Add the ferment and gradually add the flour from the crown to form a bun.
- When the dough is firm, add the butter in pieces.
- Let the bun rest at room temperature for two hours, covered with cling film or a cloth.

For baking the panettone
- Spread the dough out on the work surface and form a square.
- Add the hazelnuts and couverture in pieces. I made the bun again.
- Place it in a sweet bread pan and let it rest for 1 hour.
- Place pieces of butter on the surface to melt during cooking. This can cause it to turn brown.
- Once the time is up, cook in the oven over medium heat for 45 minutes.
Cooking time: 45 minutes.
