Talk about Zarate is to talk about one of the families who best knew how to interpret Val do Salnés. From his 15th century mansion in Meaño, seven generations have maintained an intimate relationship with the vineyard, rediscovering the agricultural heritage of … a region where the Atlantic marks the pulse.
His work was essential for define Albariño contemporary, but also to save the almost extinct red grape varieties – caiño, loureiro tinto and espadeiro – which today once again occupy the place they deserve. This look at the past, combined with a precise and respectful viticultureallowed Zárate to be a reference.
Among the red wines they produce, their Espadeirocoming from a plot planted more than six decades ago on granite xabre soils at just 50 meters above sea level.
The late variety retains a high natural aciditywhich gives rise to vibrant wines with a distinctly Atlantic character. Fermentation is carried out in open vats with daily punching down for four weeks, in search of a delicate extraction and a aromatic infusion much more than a powerful maceration. Then the wine spends twelve months in a 500 liter third year French oak barrel, where it completes malolactic fermentation.
