Christmas call for tenders

Ingredients:
- 1 can of pineapple in syrup
- 2 tablespoons of honey
- 1 small onion in pieces
- 2 tablespoons of apple cider vinegar
- 2 tablespoons of yellow mustard
- Salt and black pepper to taste
- 1 boneless filet mignon of approximately 900 g
- 6 whole cherries in syrup to decorate
- Egg sprigs to decorate (optional)
Preparation method:
- Take 1 slice of pineapple in syrup, chop it and blend it in a blender with 1 cup (tea) of syrup, honey, onion, vinegar, mustard, salt and pepper to taste until smooth.
- Pour into a saucepan and cook over low heat for 10 minutes, stirring occasionally.
- With a sharp knife, make shallow cuts on top of the tender.
- Place the filet mignon on a baking sheet, pour the drained sauce over it and cover with foil.
- Bake in a preheated medium oven for 30 minutes.
- Remove the paper and bake for 15 minutes or until golden brown.
- Arrange the filet mignon slices on a plate drizzled with pan sauce decorated with pineapple slices and cherries in the center.
- If you prefer, also decorate with egg sprigs. Then serve.
